I don’t know what it is about classic, vegetable, cabbage soup that makes it my absolute favourite but it always has been and I constantly crave the simplicity of it. Don’t get me wrong, I love all soups but for me, there is something about a good, chunky cabbage soup with a tomato broth that just does it for me. This recipe is super basic (in a good way) and has been on rotation in my house for years. You can make a big batch and freeze some of it for up to 3 months. I like to freeze mine in smaller portions so I can defrost whenever I feel like having a bowl without defrosting big portions.
