Growing up we used to have something similar to these all the time except my Dad made them way more professional, rolled up and into sushi style pieces. Recently, I have had to great creative with my lunches because Kris gets bored of my usual salad and sweet potato. Lunch is also a meal that I often eat out at or order in. I decided to throw these together randomly and now we eat this for lunch twice a week. I am going to tell you what we generally use to make these but any vegetables would work well!

Grilled Vegetable Hummus Wraps
Servings 2 servings
Ingredients
- 2 to rtilla wraps we use Siete wraps
- 4 tbsp hummus
- 1 cup mushrooms sliced
- ½ cup red peppers sliced
- 1 cup zucchini sliced and halved
- ¼ sliced green olives
- ½ tsp garlic powder
- Spinach or arugula optional
Instructions
- Heat a pan to medium, high heat and add some of your favourite cooking spray or avocado oil. Once warm add in mushroom, pepper, zucchini and sauté 2-3 minutes. Add in garlic powder and continue cooking another 4-5 minutes until vegetables are cooked to your liking.
- Heat up your tortilla wraps however you’d like. I have a gas range and like to just warm them up on each side for about 30 seconds. It works perfectly on the Siete wraps.
- Once tortilla wraps are warm, spread 2 tbsp of hummus onto center of the wrap and top with cooked veggies. Add olives and spinach or arugula on top (if using).
- Wrap it up and eat it like a taco! If you are using larger wraps you can fold it up nicely and cut in to sushi like pieces… it’s very satisfying to eat it this way.
