Autumn Harvest Apple Pie Toast

Ingredients
- Cinnamon Apples
- 1 apple diced (skin on for extra fiber)
- 1-2 tsp cinnamon
- Juice of 1 small lemon
- 1 tbsp maple syrup
- 3-4 tbsp water as needed
- Apple Pie Toast
- 1 slice of gluten free or sourdough bread toasted
- 3-4 tbsp Greek Yogurt or dairy free coconut yogurt
- Cinnamon apples
- Optional toppings - nut / seed butter chopped , walnuts, Drizzle of honey or maple syrup
Instructions
Cinnamon Apples:
- In a small pot, mix diced apples, lemon juice, maple syrup, cinnamon, and water.
- Cook on medium-low with the lid on for 5-10 minutes, stirring occasionally and adding more water if needed.
- Once the apples are soft, remove from heat
Apple Pie Toast:
- Toast your slice of bread. Spread a layer of yogurt over the toast. Pile on the warm cinnamon apples. Optional - Drizzle honey / maple syrup, nut butter on top and sprinkle some walnuts.
