Autumn Harvest Apple Pie Toast

Servings 1

Ingredients

  • Cinnamon Apples
  • 1 apple diced (skin on for extra fiber)
  • 1-2 tsp cinnamon
  • Juice of 1 small lemon
  • 1 tbsp maple syrup
  • 3-4 tbsp water as needed
  • Apple Pie Toast
  • 1 slice of gluten free or sourdough bread toasted
  • 3-4 tbsp Greek Yogurt or dairy free coconut yogurt
  • Cinnamon apples
  • Optional toppings - nut / seed butter chopped , walnuts, Drizzle of honey or maple syrup

Instructions

Cinnamon Apples:

  • In a small pot, mix diced apples, lemon juice, maple syrup, cinnamon, and water.
  • Cook on medium-low with the lid on for 5-10 minutes, stirring occasionally and adding more water if needed.
  • Once the apples are soft, remove from heat

Apple Pie Toast:

  • Toast your slice of bread. Spread a layer of yogurt over the toast. Pile on the warm cinnamon apples. Optional - Drizzle honey / maple syrup, nut butter on top and sprinkle some walnuts.
