This soup is the perfect recipe to keep you warm on those cold days. Filled with nutrients. It was adapted from a Goop recipe. The smell alone will fill your house with warmth.
Asian Chicken Meatball Soup

Ingredients
SOUP
- 8 Cups Bone Broth
- 2 large scallions cut into 2-inch pieces
- 2 garlic cloves smashed
- 1 3-inch piece fresh ginger, cut into 1/4-inch slices
- A pinch of salt
MEATBALLS
- 1 pound ground chicken
- 2 small scallions minced or finely chopped
- 2 heaping tbsp finely chopped fresh cilantro
- 2 tsp very finely grated or minced fresh ginger
- 1 tsp toasted sesame oil
- 4 tsp tamari
- 1/2 tsp kosher salt
- 4 baby bok choy cut into quarters
Instructions
- Combine the bone broth, scallions, garlic, ginger and salt in a pot or French oven. Bring the mixture to a boil, then reduce heat to maintain a low simmer, cover and now prepare the meatballs.
- Meatballs - in a medium bowl, mix together all the meatball ingredients making sure everything is evenly combined. Wet your hands, this will ensure the mixture doesn't stick, and roll into 24 small meatballs.
- Remove aromatics from the broth (either by straining or pulling them out) add the meatballs and simmer for 5 minutes or until cooked through.
- Add the bok choy, and simmer for 1 minute.
- Serve and enjoy!
