I was seriously craving carrot cake for the last couple weeks and have been playing with recipes to come up with the perfect texture all while keeping the recipe gluten free, dairy free and refined sugar free. I came up with this recipe and it is delicious and hits the spot. You can easily make this into a cake or muffins, I opted for muffins because it helps me with portion control!
