Cauliflower Fried Rice
Servings 4 servings
Ingredients
- 1 Head of Cauliflower medium sized
- 2 Eggs
- 1 Small White Onion chopped small
- 2 Green Onions sliced thinly
- 2-3 TBSP Soya Sauce or Liquid Aminos
- 3 TBSP Chicken Stock or Water
- 2 TBSP Avocado Oil
- Salt to taste
Instructions
- Clean and cup of Cauliflower into small florets.
- Pulse in blender in batches until "rice" like.
- Let it sit and dry out for 10 minutes (can omit this step)
- In a large pan add 1/2 TBSP avocado oil and scramble eggs. Cook about 3/4 of the way and then remove from pan and set aside.
- Add 1 TBSP Avocado Oil and cook white onion about 3 minutes until just softens.
- Add in Cauliflower, salt and chicken stock or water, mix all together.
- Cover and let sit on Medium heat for 5 minutes.
- Remove cover and let cook another 3-4 minutes, saute a bit.
- Add in green onion, egg and soya sauce and mix together for about 2-3 minutes.
- Serve and enjoy!
