This bowl is filled with great flavours and packed with vegetables. There’s many steps to do, but all easy one. Follow along to create this colourful bowl.
Chicken Vegetable Bowl
A healthy meal filled with vegetables and grilled chicken.

Ingredients
BOWL
- 2-3 organic chicken breasts
- 4 boiled beets sliced 1/4" thick
- 1 sweet potato sliced into disks about 1/4" thick
- 1 avocado cubed
- 1 cup cooked brown long grain rice
- 1 cup arugula
- 1 orange
- garlic powder
- sea salt & pepper
- Olive Oil
- Avocado Oil
VINAIGRETTE
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- sea salt & pepper
Instructions
- Marinate chicken in a bit of avocado oil, 1/2 juice of orange, 1 tsp garlic powder, sea salt and pepper. Let sit for about an hour
- Pre-heat oven to 400F and line baking sheet with parchment paper or silicone mat
- Marinate the beets at the same time as the chicken. Olive oil, the other 1/2 of the juice of the orange, 1 tsp garlic powder, sea salt and pepper and let sit until ready to serve.
- Clean and slice sweet potato (skin on) in a bowl add avocado oil, sea salt, garlic powder, pepper, roast in the oven for 25-30 minutes.
- Cook rice according to cooking instructions. I use a rice cooker.
- One all of this is done, it's time to create your bowl. Add in all the ingredients in portions that work for you.
- Top with vinaigrette. Enjoy!
