This is not exactly a panzanella salad but its as close as we’re gonna get and it hits the spot the way a classic panzanella salad would. I like to use Siete wraps but any tortilla of your choice will work. You could also make delicious sourdough croutons but I like to keep my recipes GF!
GLW Style Panzanella Salad
Servings 2 people
Ingredients
- 2-3 Heirloom Tomatoes sliced in small wedges
- 1/2 cup cilantro chopped
- 2 green onions chopped
- Zest of 1 lemon
- 1/2 lemon juice
- 1/4 cup good quality Olive Oil
- Maldon Salt & freshly ground pepper
- Tortilla chips:
- 2-3 GF Tortillas I used Siete 3 tbsp avocado oil
- 2 tsp italian seasoning
- 1 tsp garlic powder
- Salt & pepper
- 3-4 Baby Cucumbers, sliced on an angle
Instructions
- Preheat oven to 350F.
- Combine tortilla chips seasoning in bowl (avocado oil, italian seasoning, garlic powder, salt and pepper) and brush over tortillas.
- Bake in preheated oven for 8-10 minutes or until they are golden brown. Let them sit for a few minutes and then break them into little pieces.
- In a bowl add your tomatoes, cucumber, cilantro, green onions, lemon zest and topwith olive oil, lemon juice, maldon salt and pepper.
- Toss and to combine. Add in tortilla chips, mix them in, Serve & enjoy!
