While in Costa Rica, we had this salad for lunch. I immediately asked the chef what was in it! It was so good. No gatekeeping here, I knew I had to share it with GLW!
Nosara Salad
Servings 2 people
Ingredients
- 1 head roasted cauliflower
- 1 small red onion
- 1 head kale cut up
- 1/3 cup sliced kalamata olives
- 1/3 cup slivered almonds
- 1/3 cup dates chopped small
- *optional* Feta cheese
Cauliflower Seasonings:
- 1 tsp paprika
- 1 tsp oregano
- 2 tbsp avocado oil
ACV Tahini Vinaigrette:
- 1/4 cup tahini we suggest Tahini Goddess Classic Tahini
- 3 tbsp Apple Cider Vinegar
- 1/2 tbsp maple syrup
- 1 tbsp olive oil
- Salt & Pepper
Instructions
- Preheat the oven to 375 F and prepare a baking tray with unbleached parchment paper. Toss cauliflower with seasonings and roast in a heated oven for 20-25 minutes. Until golden but not charred.
- While your cauliflower is roasting, chop and prepare all other ingredients and vinaigrette.
- Let cauliflower come to room temp and then combine all ingredients and toss with ACV Tahini Vinaigrette.
- Serve with your favourite protein or on its own and ENJOY xo
