It’s that season! Pumpkin season! Where all things pumpkin are delicious. Here’s another must have pumpkin recipe to all to your seasonal roster. We guarantee you will not be disappointed!
Pumpkin Chocolate Chip Cookies
Servings 12 cookies
Ingredients
- 1 egg
- ½ cup coconut sugar
- 1 tsp vanilla
- ¼ cup coconut oil melted and cooled
- 1 cup almond flour
- 1/2 cup coconut flour
- ½ tsp baking soda
- 1/3 cup dark chocolate chips
- 1/4 cup pumpkin purée
- 2 tsp pumpkin spice
Instructions
- Preheat the oven to 350 F, prepare a baking sheet with parchment paper or a silicone mat.
- In a larger mixing bowl, add the pumpkin puree with the egg, coconut oil, vanilla and coconut sugar.
- Add in almond flour, coconut flour, pumpkin spice and baking soda to your bowl and mix together all ingredients until nicely combined.
- Fold in chocolate chips. Form dough into tbsp balls, place onto baking sheet and flatten with fingertips or a spatula.
- Bake 12 minutes, or until edges are golden, remove and let cool before serving, enjoy!
- Optional: sprinkle flakey salt on top!
