I am all about homemade non-dairy milks, the beauty in making your own milks is that you can get creative and try new things. Walnuts are one of the most nutrient dense and delicious nuts there is and you can milk almost any nut. I make this milk here or there, but it is delicious and a nice change from my usual almond or coconut milks. You can sweeten if you choose to, if you do not want to sweeten just omit the dates in this recipe.
Walnut Milk
Servings 1 Litre
Ingredients
- 1 cup walnuts
- 3 cups filtered water
- 1 tsp vanilla
- ¼ tsp sea salt
- 1-2 dates
Instructions
- Soak walnuts overnight or a minimum of 6 hours, add a little sea salt to release any enzyme inhibitors. Once soaked, rinse really well and add to a high powered blender.
- Add in filtered water, vanilla, sea salt and dates. Blend for 1-2 minutes.
- Using a nut milk bag or cheesecloth, strain milk through and discard pulp. Pulp can be dehydrated and used as flour.
- Transfer to a glass bottle and store in the fridge for up to 5 days, enjoy!
