Katherine has been making these candied almonds with her mom since she was a kid. She decided to try it out with coconut sugar to make a healthier version. It’s not as grainy as the original with white sugar but they’re still very tasty.
Healthier Candied Almonds
Ingredients
- 1/4 cup cold water
- 2 tsp cinnamon
- 1 1/2 cups coconut sugar
- 3 1/2 cups almonds not blanched
Instructions
- Combine water, coconut sugar and cinnamon in saucepan.
- Cook almonds in liquid on medium heat until all liquid is evaporated.
- Spread on a cookie sheet and sprinkle with a little more coconut sugar.
- Place under the broiler for a few more minutes.
These also make a great hostess gift! Find a cute jar or tin, place a doily on the bottom and fill with candied almonds.
