Gluten-Free Fruit Summer Rolls with Lemon Vanilla Yogurt Dip

Ingredients
- **For the Summer Rolls:**
- 8 rice paper summer roll wrappers
- 2 apples diced
- 1 small mango cut into strips
- 5 strawberries sliced
- ¼ cup blueberries
- Sprigs of mint
- **For the Yogurt Dip:**
- 3 tablespoons plain Greek yogurt
- 1 tablespoon maple syrup
- Squeeze of lemon juice
- Zest of half a lemon
- ¼ teaspoon vanilla extract
Instructions
- Clean and slice the fruit as directed.
- Fill a large bowl with cold water.
- Dip one rice paper wrapper into the water for a few seconds to soften.
- Remove and carefully place it on a large plate or a cutting board.
- Place a portion of the diced apples, mango strips, raspberries, sliced strawberries and mint (if using) on one side of the softened rice paper.
- Fold in the top and bottom edges, then roll tightly from one side to the other.
- Place the finished roll onto a plate with the folded side down.
- Repeat with the remaining rice paper wrappers and fruit.
- In a small bowl, mix together the Greek yogurt, maple syrup, lemon juice, lemon zest, and vanilla extract.
- Serve the fruit summer rolls with the lemon vanilla yogurt dip on the side.
