Fresh, colorful, and packed with protein, this High Protein Summer Chopped Chicken Salad is the perfect warm-weather meal. Crisp vegetables, fresh herbs, and tender chicken are tossed in a creamy lemon Dijon dressing for a light yet satisfying salad that’s ideal for meal prep, lunch, or a quick weeknight dinner.

High Protein Summer Chopped Chicken Salad

Ingredients

For the Salad

  • 2 cups cooked chicken breast chopped (rotisserie chicken works great)
  • 1 baby cucumber finely diced
  • 2 celery stalks finely diced
  • A handful of shredded cabbage and carrots coleslaw mix
  • 1/4 cup cherry tomatoes chopped
  • 2 green onions finely sliced
  • 2 –3 tablespoons fresh herbs chopped (Italian parsley, dill, and/or chives)

For the Dressing

  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons Dijon mustard
  • Juice of 1/2 lemon
  • A drizzle of olive oil
  • Salt pepper, and garlic powder, to taste

Instructions

  • Add the chicken, cucumber, celery, cabbage and carrot mix, cherry tomatoes, green onions, and fresh herbs to a large mixing bowl.
  • In a small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, olive oil, salt, pepper, and garlic powder until smooth and creamy.
  • Pour the dressing over the salad and toss until everything is evenly coated.
  • Taste and adjust the seasoning as needed.
  • Serve immediately, or refrigerate for 15–30 minutes before serving to allow the flavors to meld.
  • Enjoy on its own, in lettuce cups, wrapped in a tortilla, or served alongside your favorite crackers or toasted bread.
