High Protein Summer Chopped Chicken Salad
Ingredients
For the Salad
- 2 cups cooked chicken breast chopped (rotisserie chicken works great)
- 1 baby cucumber finely diced
- 2 celery stalks finely diced
- A handful of shredded cabbage and carrots coleslaw mix
- 1/4 cup cherry tomatoes chopped
- 2 green onions finely sliced
- 2 –3 tablespoons fresh herbs chopped (Italian parsley, dill, and/or chives)
For the Dressing
- 2 tablespoons plain Greek yogurt
- 2 tablespoons Dijon mustard
- Juice of 1/2 lemon
- A drizzle of olive oil
- Salt pepper, and garlic powder, to taste
Instructions
- Add the chicken, cucumber, celery, cabbage and carrot mix, cherry tomatoes, green onions, and fresh herbs to a large mixing bowl.
- In a small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, olive oil, salt, pepper, and garlic powder until smooth and creamy.
- Pour the dressing over the salad and toss until everything is evenly coated.
- Taste and adjust the seasoning as needed.
- Serve immediately, or refrigerate for 15–30 minutes before serving to allow the flavors to meld.
- Enjoy on its own, in lettuce cups, wrapped in a tortilla, or served alongside your favorite crackers or toasted bread.
