These muffins are delicious for breakfast or as a snack! They are packed with healthy and delicious ingredients and pair nicely with your favorite yogurt. You can swap the raspberries for blueberries or any other fruit and it works well! 

Raspberry Chia Muffins

Prep Time 10 minutes
Cook Time 20 minutes
Servings 10 muffins

Ingredients

  • 1 cup gluten free flour
  • 1 ½ cup rolled oats
  • ½ cup coconut sugar
  • 1 tbsp baking powder
  • 1 tbsp chia seeds
  • 1 cup non-dairy milk I used coconut milk
  • 1 egg
  • 3 tbsp avocado oil
  • 2 tsp vanilla
  • 1 cup raspberries

Instructions

  • Preheat the oven 400F. Spray muffin tray or use silicone tray or muffin liners.
  • Combine all dry ingredients in a large mixing bowl. In a separate bowl whisk together the wet ingredients (non-dairy milk, egg, avocado oil and vanilla).
  • Add the wet mixture to the dry ingredients and stir until completely combined. Using a spatula gently fold in the raspberries.
  • Divide the batter between the muffin trays and bake for 15-20 minutes or until a toothpick comes out clean and tops are golden brown.
