A few months ago I was in New York and went to eat at one of my favourite vegan restaurants, ABCV and had a delicious Mushroom Walnut Bolognese dish and knew I had to recreate it. I have since played with a few recipes until I perfected this one. This is one of my current favourite meals. I actually prefer it to the meat alternative, it’s super filling and satisfying. I decided to film this one since it’s not your typical recipe. This recipe works best using a food processor but using a blender would work as well. You can serve this over the pasta of your choice or zucchini noodles if you follow the principles of food combining.
