Quick Vegan Pad Thai

Servings 2 people

Ingredients

Pad Thai

  • Sesame Oil
  • 2 garlic cloves
  • 1 red onion sliced
  • 2 red bell pepper sliced
  • 1 head of broccoli chopped
  • 1 cup of shitake mushrooms chopped
  • 3 thai red chilli peppers finely chopped
  • 1 lime juice
  • 1-2 cups of rice noodles
  • Handful of bean sprouts optional
  • Handful of unsalted peanuts optional

Sauce

  • 1 tbs sesame oil
  • 3 tbs tamari Or Coconut Aminos
  • 3 tbs Maple syrup 1.5 tbs if using Coconut Aminos
  • 1 tbs miso paste

Instructions

  • Put a pot of water to boil
  • Mix all ingredients together for sauce - set aside
  • Heat a large pan with sesame oil, garlic and onion (let sizzle 1-2 min)
  • Add in all veggies and drizzle lime juice (8 minutes)
  • Add your rice noodles to boil (6-7min), drain and rinse in cold water
  • Add noodles to pan and sauce
  • mix well and take off heat
  • top with lime juice and peanuts (optional)
