It’s gluten free, vegan and quick to put together!
Quick Vegan Pad Thai

Servings 2 people
Ingredients
Pad Thai
- Sesame Oil
- 2 garlic cloves
- 1 red onion sliced
- 2 red bell pepper sliced
- 1 head of broccoli chopped
- 1 cup of shitake mushrooms chopped
- 3 thai red chilli peppers finely chopped
- 1 lime juice
- 1-2 cups of rice noodles
- Handful of bean sprouts optional
- Handful of unsalted peanuts optional
Sauce
- 1 tbs sesame oil
- 3 tbs tamari Or Coconut Aminos
- 3 tbs Maple syrup 1.5 tbs if using Coconut Aminos
- 1 tbs miso paste
Instructions
- Put a pot of water to boil
- Mix all ingredients together for sauce - set aside
- Heat a large pan with sesame oil, garlic and onion (let sizzle 1-2 min)
- Add in all veggies and drizzle lime juice (8 minutes)
- Add your rice noodles to boil (6-7min), drain and rinse in cold water
- Add noodles to pan and sauce
- mix well and take off heat
- top with lime juice and peanuts (optional)
