In the last 6 months I have been eating a lot more plant based and I very rarely eat eggs because I don’t digest them well. I started following different plant based accounts online and have seem a lot of “chickpea eggs”. It’s super simple, protein packed and tasty! I love making this recipe as a scramble and serve it on a piece of toast or with a salad! You can add any vegetables you like, you can even have this as is without veggies! Add some vegan cheese if you’d like!
