Fall is finally here, and you know what that means? Pumpkin Spice Lattes! You can enjoy this great drink (almost) guilt free, no need to all that unnecessary sugar. Plus it’s kinder on your wallet.
Here is a healthier version of a pumpkin spice latte for you to enjoy.
Healthy Pumpkin Spice Latte
Servings 1 serving
Ingredients
- 8 ounces brewed coffee or 1–2 shots of espresso
- 1/2 cup Coconut Milk any non-dairy milk is good
- 3 tbsp pumpkin puree
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla
- 2 tsp maple syrup or sweetener of choice
- sprinkle of cinnamon optional
Instructions
- In a cup or sauce pan, mix together coconut milk and pumpkin.
- Cook on medium heat on the stove top or microwave for 30-45 seconds.
- Remove from heat, stir in vanilla, spices and sweetener, place in a cup and use a frother to foam the milk. You can also use a blender (I use my Nutribullet) — just process for 30 seconds or until foamy.
- Pour coffee into a large mug, add the foamy milk mixture on top.
- Sprinkle with cinnamon and enjoy!
