Ingredients

  • 2 cups cooked or canned chickpeas drained
  • 1/2 cooked beet
  • 1/2 cup tahini with some of its oil
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic peeled
  • Juice of 1 lemon plus more to taste
  • Salt and freshly ground black pepper
  • 1/3 to 2/3 cup ice water
  • 1 tablespoon ground cumin or paprika adjust to taste
  • Extra garnish optional: chopped fresh parsley leaves, lemon zest, seeds and nuts of choice

Instructions

  • Combine chickpeas, beet, tahini, olive oil, garlic, lemon juice, and cumin or paprika in a food processor.
  • Sprinkle with salt and pepper, then process until smooth, adding a splash of ice water as needed to achieve desired consistency. Ice water makes the hummus creamy, light, and fluffy.
  • Taste and adjust seasoning, adding more salt, pepper, or lemon juice if necessary.
  • Serve drizzled with olive oil and sprinkled with cumin or paprika, and garnish with parsley and any other desired toppings.
  • Enjoy your vibrant and flavorful pink beet hummus!
