They may not look the cutest in photos, but the taste is amazing! Perfect for a cookie exchange or as a hostess gift! Take it up a notch by using your own homemade jam!
3 Ingredient Vegan Thumbprint Cookies
Servings 14 cookies
Ingredients
- 1 1/4 cup Almond Flour
- 2 tbsp Coconut Oil melted
- 1 1/2 tsp Maple Syrup
- Raspberry Jam - Used a Chia one made with natural sugar
Instructions
- Combine Almond Flour, Coconut Oil and Maple Syrup in a bowl and mix together until combined.
- Cover with wrap and place in fridge for 30 minutes to 24 hours.
- Pre-heat the oven to 375F and prepare baking tray with parchment paper or a silicone baking sheet.
- Remove from the fridge and form into 1" balls (makes about 12-14 cookies)
- Press thumb down in center and add approx. 1 tsp of jam on each cookie.
- Bake for 10 minutes or until edges are golden brown.
- Let cool and enjoy!
