I love a big salad for lunch but you have to keep things interesting and try adding different vegetables and switch up the dressings. I like to eat as seasonally as possible and of course, summer has so much great produce to offer! I have been having this salad on repeat and I am very into it! Kg’s Current Fave Summer Lunch

Ingredients
- 4 Cups Romaine cut
- 1 Avocado Cubed
- 1/2 Cup Cherry Tomatoes halved
- 1/2 Cup Cucumber halved
- 1/2 Cup Broccoli cut florets in half
- 1/4 Corn I use fresh or frozen and thawed
- 1/2 Cup Chickpeas
- 1/2 Cup carrots shredded
Instructions
- Add all your salad ingredients to a mixing bowl.
- Top with dressing of your choice, combine, serve and enjoy!
Notes
Dressing: I use my Green Goddess Dressing but you can use anything! Even just some Olive oil, lemon and sea salt & pepper is delicious!
