Whenever the warm weather rolls around I love using fresh local produce to make big delicious salads using whatever is in season. I also love adding corn to my salads in the warmer months. Since it’s not quite summer I decided to roast the corn and chickpeas in this salad and it turned out to be amazing! I have made it a bunch of times during quarantine and it is definitely going to be a staple. This is a great meal salad for lunch or dinner!
