These are the perfect holiday cookie. They are vegan, gluten free, grain free and dairy free. I would double up recipe to make about 20 cookies. Perfect to bring as a hostess gift or for the annual cookie swap!
Vegan Holiday Spice Cookies
Servings 10 servings
Ingredients
- 2 tbsp ground flax
- 1/4 cup Water
- 1/2 cup Almond flour
- 1/2 cup coconut sugar divided
- 1/4 tsp fine grain sea salt
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 1/4 tsp allspice divided
- 1 tsp vanilla extract
- 1/3 cup creamy cashew or almond butter
- optional; sprinkle of cane sugar
Instructions
- Stir together the flax and water; set aside. In a large bowl mix together almond flour, 1/2 cup coconut sugar, salt, baking soda, cinnamon, 3/4 tsp allspice and nutmeg.
- Add vanilla, almond butter and flax mixture, stir until combined (you might need two spoons or use your hands as the dough is thick)
- Place the dough into the fridge for 1 hour prior to dividing and rolling them out.
- Roll the dough into 10 equal balls and place on a parchment-lined pan, flattening slightly with your palm. Leave room between as they spread.
- Bake at 375F for 10 minutes or until edges are just brown. Optional; sprinkle with cane sugar before baking. Let cool for 30 minutes before serving.
