This salad was an attempt to somewhat recreate the creamy dill salad from one of my favourite restaurants, Milos – just in a healthier way. My spin on an organic fresh herb Boston lettuce salad. Loved by my friends, family and loyal KG Kitchen followers, we knew we couldn’t launch the website without my standard greens.
Boston Lettuce Herb Salad
Servings 4 servings
Ingredients
Salad
- 1 large head of Boston lettuce
- ¼ cup fresh cilantro stemmed
- ¼ cup fresh Italian parsley stemmed
- ¼ cup fresh dill stemmed
- 1 avocado cut into chunks
Green Goddess Dressing:
- 1 tbsp Dijon mustard
- 1 tbsp red wine vinegar
- 1 tsp honey
- ½ of a lemon the juice
- ½ cup mixed herbs cilantro, parsley, dill
- 1 garlic clove
- 4 - 5 tbsp olive oil
- Some sea salt and pepper
Instructions
- Mix all salad ingredients into a bowl and combine.
- Combine all dressing ingredients and blend together in a blender or nutribullet. This will give it that nice creamy consistency.
- Combine and enjoy.
