These are so yummy, easy to make and a perfect lunch or dinner quick go to! A few months back I began making my Hummus Veggie Wraps and decided to switch it up and add some Mexican flavour and I’m so happy I did because these are equally as delicious. You can use any veggies you’d like, these are the ones I generally use! If you have the time or have extra you can use guacamole, if you don’t you can simply use mashed avocado!
Mexican Veggie Wraps
Servings 1 serving
Ingredients
- 1 Tortilla of your choice I use Siete
- 1/2 avocado mashed
- 1/4 red onion sliced
- 1/2 bell pepper sliced
- 1/2 cup sliced mushrooms
- 1/4 tsp chilli powder
- 1/4 tsp garlic powder
- Sea salt & pepper
Instructions
- In a medium skillet, heat a little oil, once hot add in your onion, bell pepper and mushrooms. Sauté until veggies start to soften.
- Add spices, salt and pepper and let cook additional 3-4 minutes.
- Meanwhile, heat up your tortillas, see photo for how I do it. You can also just heat on pan, in oven or microwave.
- Once tortilla has been warmed up, add mashed avocado or guacamole as a base. Top with cooked veggies, sprinkle some cilantro, salsa or toppings of your choice and enjoy!
